Chewy Chocolate Chip & Oat Cookies

Bite into chocolatey indulgence paired with some healthy oatmeal

I love collecting recipes. Sometimes I pick them up at supermarket aisles, magazines or wherever I come across with an interesting recipe that my family may enjoy or that I would like to try out and convert to a Thermomix method.

So, here’s one I kept in my collection that was on my to-do list.

My kids love chocolate chip cookies, probably just like many other kids. I thought this was interesting with some added oatmeals. So, here’s my take on the original recipe (sorry, I do not recall where I had picked it up from), with a slight tweak to our liking.

Hope you’ll enjoy this little chocolatey indulgence paired with some nice nutty and healthy rolled oats, making this my kids’ current favourite chewy chocolate chip cookie.

As usual, my recipes are often the reduced sweet version, so feel free to adjust the sugars to your preference. The baking time is just a guide as every oven works differently, so please adjust to your oven settings.

Chewy Chocolate Chip Oatmeal Cookies

A combination of chocolate chips with healthy oat cookies
Prep Time 40 mins
Cook Time 15 mins
Course Dessert

Equipment

  • Thermomix

Ingredients
  

  • 135 g Rolled oats
  • 110 g butter cubed
  • 50 g cane sugar (or 40g less sweet)
  • 50 g brown sugar (or 40g less sweet)
  • 1 tsp vanilla extract pure extract
  • 1 pc egg large, 60g
  • 95 g all purpose flour
  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 100 g semi sweet or dark chocolate chips adjust to liking

Instructions
 

  • Place flour, baking soda and salt into TM bowl. Blitz 5 secs/Sp6. Set aside
  • Put butter and sugar into TM bowl. 1 min 30secs/Sp3.5 . Increase speed gradually and beat till light and fluffy
  • Scrape down sides of bowl, add egg and vanilla extract. Mix till combined. 15 secs/Sp3.5
  • Scrape down sides of bowl. Add in flour. Mix 10 secs/Sp3
  • Add in rolled oats and chocolate chips. Mix gently. 10secs/R Sp3
  • Using spatula, mix in gently any portion of dough not mixed in.
  • Pour into a bowl and cling wrap it then chill in refrigerator for 30 mins.
  • Preheat oven 10 mins before making the the cookies. 180-190c. Adjust heat setting accordingly to your oven.
  • Using 2 spoons, scoop a tablespoon of dough and place onto greased baking paper or parchment paper.
  • Alternatively, make into round balls then flatten, making 4-5cm round shapes.
  • Leaving about 2" gap between cookies as the cookies will spread out a little while baking.
  • Bake till cookies are lightly golden brown on the edges, and slightly risen.
  • Leave to cool on baking tray for few minutes then transfer to a cooling rack. Store in an airtight container when cooled.
  • Enjoy with a cup of coffee, tea or cold milk.

Notes

Use semi sweet or dark chocolate chips for that chocolate indulgence minus the extra calories.  The chocolate flavour is well balanced with the nutty oats, making the texture lightly crispy yet chewy on first bite.  
Serve with a scoop of vanilla ice cream for that delightful treat once in a while and top with more rolled oats or my favourite roasted pistachios for that extra nutty flavour.  Or with your favourite cuppa tea or coffee.  My kids love having it with just plain cold milk.  
  • Adjust sugar as desired.  For those with sweeter tooth, 100g may be just right for you or try 80g (total) for a less guilty indulgence paired with dark chocolate chips.
