No Churn Coffee Ice Cream

For the Coffee Lovers…

Actually, I’m not a coffee drinker but I do enjoy coffee treats and bakes. Made this especially for my coffee loving daughter who gave me the stamp of approval. So, I thought I’d share this simple no churn coffee ice cream that you can prepare on the same day or day ahead of a dinner party or just for your own family treat.

Use a good quality instant coffee granule and it makes a world of difference in flavour and taste. Experiment as you like if you prefer a stronger coffee flavour by adjusting the coffee paste or using various coffee granules for a different coffee experience. Anyway, just blend and enjoy it! Everyone loves an occasional ice cream treat, be it young or old!

No Churn Coffee Ice Cream

A creamy coffee ice cream treat you can make quickly for same day treat. One scoop is not enough!

Equipment

  • Thermomix, TM5, TM6

Ingredients
  

  • 200 g egg whites
  • 1 tsp cream of tartar
  • 120 g caster sugar
  • 1 tsp vanilla extract
  • 3 tsp instant coffee granules mixed into 1 tsp hot water
  • 600 g whipping cream

Instructions
 

  • Insert butterfly into TM bowl. Place egg whites and cream of tartar into TM bowl. 5 mins/37c/Sp3
  • Add sugar slowly through the MC hole. 6 mins/50c/Sp3
  • Continue whipping another 15mins/sp2
  • Place TM bowl into the fridge for 15 mins to cool. Meanwhile, prepare coffee mixture
  • Mix 3tsp instant coffee granules with 1 tsp hot water to dilute.
  • Remove TM bowl from fridge, add in coffee mixture and whipping cream. 1 min/Sp3
  • Pour mixture into freezable container and freeze at least 6 hours.
  • When serving, scoop and serve immediately.

Notes

Tips:
Use good quality instant coffee granules for a stronger and beautiful coffee aroma.  
You may adjust the coffee or sugar slightly but recipe is a reduced sugar version.
Top with chocolate bits or some toasted nuts such as pistachios and almonds.  
*Recipe is adapted from Tenina Holder’s Killer Vanilla Ice cream.  It is one of the easiest and fast ice cream recipe which does not require multiple blending.  However, for a smoother ice cream, you may want to remove from the freezer and blend in the Thermomix for 20secs/Sp5, once, refreeze and serve at least 6 hours later.
