If you love baking sourdough breads you will probably have a lot of discards from feeding and maintaining the starter. This is a really delicious way to use up all those discards. Believe me, I’ve tried making all kinds of discard recipes. From waffles, pancakes, biscuits, crumpets to bao zi and this sourdough discard cracker recipe is still my family’s favourite! It is really simple, without the need to add more flour so you can use up a lot of discard quickly.
The trick to getting evenly crisp crackers is to spread the mixture as thinly and evenly as you can. Adjust oven temperature and baking time to achieve a slightly golden finish and be rewarded with some seriously addictive and delicious crunch!
Seeded Sourdough Discard Crackers
A great recipe that makes a yummy savoury snack to use up all those sourdough discards.
Preheat oven to 170oC (I used fan forced), line a large baking tray with baking paper.
Melt butter and cool. Then mix together with all ingredients till well combined.
Spread mixture evenly with a dough scraper onto prepared baking tray. Bake in preheated oven for 10 minutes.
Remove from oven. Using a pizza cutter, cut into squares or rectangles. Return to oven and bake for another 10 to 20 mins depending on the heat of your oven and how thin your crackers are. Check it every few minutes after 10 minutes to make sure the crackers do not burn.
If the sides are looking done but middle remains soft, remove tray from oven and take out the crackers that are golden and crisp. Returning the remaining undone crackers back to bake till done.
Cool and store in airtight container.
Notes
I love using a stainless steel mixing bowl for this especially since I can just melt the butter in the bowl over a bain marie. Basically heat a pot with water till steaming then measure the butter into the mixing bowl and melt it over the steaming water. Use the same bowl to mix all the rest of the ingredients. Options: Replace seeds with 1 tsp Italian herbs, or chilli flakes, cumin and paprika or other spices and herbs.
